One of my most memorable meals was
in the Galleria Vittorio Emanuele II in
Milan, Italy. I don’t remember the name of
the restaurant, but my wife Franca wanted
me to try the specialty of the Milanese
populace, Risotto alla Milanese. I’m not
knocking Uncle Ben’s rice; it’s good in
its’ own right. But Italian Arborio is the
undisputed champion.
The Milanese
recipe is acclaimed worldwide and it
reads something like this, to serve four.
INGREDIENTS:
½ of a small onion, thinly chopped, 4
oz. butter, 1 Tbsp. extra virgin olive oil,
14 oz. Arborio rice, ½ cup white wine,
6 cups beef broth, 3 tiny portions of
saffron , 1 tsp. heavy cream, 3 oz. grated
Parmesan cheese, Salt to taste, 1 sage leaf
METHOD:
Saute onion in a big pan with 1 oz.
of butter and olive oil; when onion is
wilted, add rice and mix well. Constantly
stir, add wine; let it evaporate slowly,
add broth. Cook over a low flame for 15
