Cook the pasta in a pan of boiling salted water according to packet instructions . Crush the peppercorns lightly with the back of a knife or in a pestle and mortar . In a frying pan , add the crushed black peppercorns to a little oil and fry . Add 1-2 ladles of the cooking water from the pasta to the frying pan , being careful as the oil splashes and allow it to evaporate slightly and thicken the sauce . When the pasta is cooked , drain it , reserving 1 glass of the cooking water , and add it to pepper sauce and toss until thoroughly combined . Gradually stir in the grated pecorino and reserved cooking water to the pasta . Stir until a wonderful creamy sauce has formed and serve immediately .
This recipe is translated and adapted from Benedetta Parodi ’ s recipe in ‘ Cotto e Mangiato ’. Benedetta Parodi started her career as a news presenter before starting her own culinary column ‘ Cotto e Mangiato ’. She then went on to publish her own cookbook named after the column which sold over 1.5 million copies and in 2010 published her second cookbook ‘ Benvenuti Nella Mia Cucina ’.
