With travel restrictions and the order to stay at home having been in place for many months , it ’ s no wonder that people are turning to the arts for a form of escapism - whether it be books , films or podcasts . However , with more time on their hands , people are increasingly using cooking to travel the world and add excitement to the monotonous days . Holidays - along with many other events - have been postponed at the very least , but this hasn ’ t stopped people immersing themselves into another culture from the comfort of their own home , be it a new destination from the bucket list , simply cooking home comfort-food from their home-away-from-home or even to rekindle a fond memory .

This recipe takes me back to a 36-hour trip to Rome in 2019 where I first tried this dish in a little restaurant tucked away just behind the Colosseum whilst trying to avoid the 35 ° C heat . Setting off from the grand Milano Centrale station I had a list of recommendations for Rome that my host family had given me , however , the one they insisted on above seeing any of the sights was this one dish - Cacio e Pepe .
