a happy hour might a little too out of place with your vibe. Not to
fear: this is why the tasting menu was created. It’s essentially
happy hour, but you get to tell people what to eat for a few
courses, and pair it all with the appropriate wine.
Conventional wisdom—or is it common sense?—tells us that
filling your available seats will increase revenue. Just remember
it’s not enough to say, I’m going to get more customers and
hope for the best. Identify when you need more customers, and
how you’re going to get them in. That’s going to look different
depending on how your business operates, but in all cases: get
poeple’s butts in your seats and then show them a good time!
