Ramen is a really hearty noodle soup from Japan. Seriously tasty, and you can use any meat you like. It is hot, satisfying and seriously good on the wallet!
Ingredients
Marinade…
4 garlic cloves
1 dessert spoon Tabasco
1 tbsp sesame oil
2 tbsp soy sauce
1 cm chopped ginger
1 tbsp Chinese 5 spice
6 chicken breast fillets
125 ml white wine
And the rest…
1.25 litres chicken stock
Big handful spinach leaves
1 Red pepper very finely sliced
500 g Open cup mushrooms
More soy
Sesame oil
6 Spring Onions (scallions)
1 Egg per person
200 g Thin noodles
How to do it:
Finely chop the garlic and ginger
Add to a bowl with…
1 Dessert spoon of Tabasco
1 tablespoon sesame oil
2 tablespoons soy sauce
1 level tablespoon Chinese Five Spice Powder
125 ml white wine – you could use saki
Marinade for 2 to 3 hours, or overnight
Cook the chicken in an oven for 25 minutes at 190C, 375F, Gas5
Bring the stock to the boil and add the remaining marinade juices
Put the eggs in a pan and heat to a simmer, cooking for 7 minutes – stop the cooking with cold water and shell the eggs. Slice the eggs in half
Add half the pepper and the mushrooms
Taste the stock and season with soy and sesame oil. Sometimes the ginger can taste a little soapy, if so counter with a little sugar
Once the mushrooms are cooked add the rest of the ingredients and the noodles, turn down the heat to a simmer
Slice the chicken
After a few minutes and check the seasoning again – add a little salt if needed, but try to be sparing
Ladle into bowls and add sliced chicken and lay the egg halves on the noodles
