Ingredients
1 Kg minced beef
2 sausages, or whatever else you choose
3 - 4 garlic cloves, crushed and finely chopped
200 g bacon
1 handful chopped parsley
1 onion chopped in rings
Stuffed rolled meatloaf
Mix the meat and garlic in a bowl.
Spread the mince on a piece of baking parchment and make a rectangle that is about 1 cm deep, and about 25 cm by 20 cm - all approximate. Keep back 75 g of the mince for the sauce.
Lay the bacon on the top of this and the sausage at the lower end. Lay the onions on top of the bacon.
Use the baking parchment to roll the meat into a round, a bit like a Swiss Roll. Pack it tightly.
Double wrap and seal with kitchen foil, bake at 180 C, 350 F, Gas 4 for 60 minutes
The Sauce
Place the 75 g mince in a pan with a little water and add 1 400 g can tomatoes (chopped) and a good tablespoon of tomato puree.
Add 1/2 teaspoon oregano, a good pinch of salt and pepper and a splash of tabasco.
Bring to the boil and then simmer for 15 minutes.
