Millionaire Shortbread

Ingredients

For the shortbread

250 g plain flour

25 g custard powder or cornflour

190 g soft butter

80 g soft brown sugar

For the caramel

50 g butter

50 g soft brown sugar

1 397 ml can of condensed milk

For the chocolate

100 g each of plain and milk chocolate

50 g double (heavy) cream if using all milk chocolate only use 20 ml cream

A little hint of luxury, Millionaire Shortbread is simply delicious. It needs a little work, but it is quite easy to put together if you follow the rules.

For the shortbread

Mix together the sugars and flour

Rub in the butter in a bowl into the mixture

Knead together and press down into a buttered baking tin

Bake at 180 C, 350 F, Gas 4 for 20 - 25 minutes

For the caramel

Put the ingredients into a pan and heat gently until the sugar dissolves.

Bring to the boil and then turn the heat down so it simmers very slowly.

Cook for 4 minutes, let it cool a little and then pour over the cold shortbread.

Allow it to cool.

For the chocolate

Melt the cream and chocolate together and pour over the cold caramel.

Allow it to cool completely and then divide up with a warm knife.
