Week

Coláiste Chill Mhantáin held this year’s Healthy Living Week at the end of January which was organized by the schools Home Economics and PE departments. Throughout the week there were many events focused on the theme of healthy living, carried out across the school.

Each morning the CCM breakfast club provided the students with a free breakfast of tea, coffee, toast, cereal, yogurts and fruit, with many thanks to Glenisk for providing the school with free healthy yoghurts and Supervalu Wicklow town for providing complimentary fruit for the week. This was a great success which was extremely appreciated by many students especially during the cold January mornings.

On Tuesday first year Home Economics students and JCPS students had an excellent day with Celebrity Chef Louise Lennox from RTE's The Restaurant. Throughout the day the different groups watched and helped Louise cook popcorn chicken with a healthy ranch and avocado dressing served in lettuce boats and

quinoa and butter bean burger wraps served with a Greek yoghurt and cucumber dressing, all of which was quickly eaten up by the students and teachers!

All the students thoroughly enjoyed the interactive demonstration and also learned lots of tips and tricks in the process. Hopefully we will welcome Louise back to CCM next year. Many thanks to the JCSP scheme for the funding of this initiative.

Lunch time on Wednesday saw a heated competition between 2 teams in the CCM ready steady cook! The green pepper team of 6th years Ellen Doyle and Louise Healy took on the red tomatoes, Mr Devlin and Mr Murphy. Judges Ms Cawley, Mr Mc Inerney and 6th year student Anna Cruise had a tough decision to make at the end of the cook off taking into account how well the pairs worked as a team, the healthiness of the dishes, the use of the surprise ingredient, which was a pomegranate and of course the taste and appearance of both dishes.

However it was only by a small margin that the teacher’s team won the competition taking home the golden wooden spoons!
