The first dish is called "Beef Celery Fry."(芹菜牛肉) In China, most of the main dishes include both meat and vegetables because they not only look and taste better but also are nutritiously balanced. For the preparation work, the first step is to unfreeze the beef by putting it in hot water.

The second step is to cut the beef into slices, strips, or cubes. The Chinese have developed a sophisticated system of cutting different raw materials into various shapes. But for its taste, Xena decided to cut the beef into chopstick strips.

After cutting the beef into chopstick strips, Xena put them in a bowl with cold water to wash off the blood of the beef. This extra step is very necessary for people who cook in the U.S. because the blood is not disposed when the cattle is killed. If people do not do this preparation work carefully, the final dish will taste like blood.
