Ingredients Method
•4 stone free dates chopped up
•550 g sweet mincemeat
•Zest of 1 large orange
•1 tbsp vanilla essence
•55g self-raising flour
•1.5 tsp mixed spice
•4 tsp brown sugar
•⅓ tsp grated nutmeg
•55g fresh white breadcrumbs
•2 tbs of black treacle
•1 medium egg beaten
•A little icing sugar for snow effect
topping and Christmas decorations to
finish •Place all the ingredients into a mixing
bowl or electric mixer, and mix
together well.
•Grease a 900 ml pudding basin.
•Now place a piece of greaseproof
paper followed by a ring of tinfoil
over the top of the pudding basin,
and tie with string.
•Place the basin into a saucepan, and
fill with hot water, until it comes up
to nearly half way up the basin.
•Bring to boil, then drop back the
heat to a gentle simmer, and place a
lid on top.
•Cook for around 2.5 – 3 hours, and
check the water level does not drop
or boil dry.
•Simply serve with ice cream or
custard.
