Introducing Tuna Tartare for Two in the Oak Room

As we continue to refine our offerings and elevate our dining experience at the Club , we are excited to introduce Tuna Tartare for Two — a new dish for this season on the Oak Room menu . Inspired by our commitment to showcasing the natural flavors of bigeye tuna , a popular appetizer at the Club , this dish is a true celebration of fresh , vibrant ingredients .
Locally sourced ruby red grapefruit , black lime zest , and ginger are beautifully incorporated into a refreshing ponzu sauce , enhancing the tuna ’ s delicate flavor . Adding a touch of drama , the tartare is prepared tableside in a bowl of ice illuminated with LED lights , creating a dazzling presentation that ’ s as visually stunning as it is delicious .
We begin with exquisite Atlantic Bigeye tuna , celebrated for its rich , meaty texture and deep , robust flavor . The tuna is finely diced to enhance its delicate taste while maintaining its natural freshness . To complement the tuna ’ s richness , we incorporate diced , locally sourced Florida ruby red grapefruit , which adds a refreshing burst of citrus and acidity .
The dish is harmonized with an umami-rich soy sauce infused with the bright , tangy notes of citrus and the aromatic heat of ginger . At the base of each bowl lies a layer of crushed avocado , providing a creamy texture that perfectly balances the grapefruit ’ s acidity and the ponzu ’ s saltiness . The finishing touches include a unique smoky , dehydrated black lime zest and a touch of herbaceous micro cilantro for garnish . To complete the experience , we add a crispy rice cracker dusted with savory nori salt , offering a delightful crunch and a hint of the sea .
