No bake desserts

halls is impossible because you don’t
have an oven? Never fear, Dasha is here!
I spent my early 20’s working in kitchens
and restaurants of different sizes, and
picked up a few handy tricks that I use in
my everyday cooking life, and I’d like to
pass those tricks on to you!
Ice box or fridge cakes
You can create a lot of wonderful
desserts using the glowing heat of an
oven, but did you know the frigid cold of
your refrigerator can also fill that role?
Ice box or fridge cakes are typically
mousse based desserts which need to be
left to set in the fridge for at least a few
hours. A great example of an ice box
cake which can easily be made in the
halls is the Mexican Lemon Cake or
Carlota. Here’s how I made mine:
Ingredients:
¾ cup/175 ml fresh lemon juice
2 tablespoons lemon zest, plus more
for garnish
1 (395 gram) can condensed milk
1 (375 gram) can evaporated milk
½ teaspoon salt
Enough vanilla flavoured cookies
/ biscuits of your choice to make
3 layers in your dish
Lemon wedges, to serve
