The restaurant, located at Venice Beach LA on 1023 Abbot Kinney Blvd, is run by Evan Funke, along with Toronto-based restaurateur Janet Zuccarini. In a short space of time, they have created a reputation as one of America’s absolute best new restaurants. They have also succeeded in attracting both the LA crowd and foodies from around the world who are in search of the perfect bowl of pasta, including that of native Italy. The menu is based around the concept of Pasta fatta a mano - whereby all the pasta is handmade fresh everyday, in spite of being in an era where machines and automation have replaced the inherited techniques taught by old Italian grandmothers for generations. To be able to deliver a flawless product, Funke has built his own Laboratoria - a temperature controlled laboratory in the middle of the restaurant where you as a guest, can see the craftsmanship behind the handmade pasta while you are dining.
