Rhubarb , rhubarb !

Winchester-based TV Chef James Martin ’ s recipe for rhubarb crumble is a winner . Cut up 10 sticks of rhubarb and roast in the oven with four tablespoons of water and eight tablespoons of caster sugar for 10 minutes . Sprinkle over a teaspoon of ground ginger and spoon into an ovenproof dish . Top with crumble : 110g butter rubbed into 200g plain flour and 110g demerara sugar mixed through . Bake at 180C / Gas 4 until bubbling ( about 40 minutes ).

This classic local treat is spot on for a tasty light lunch or supper over the Easter weekend . Buy hot smoked fillets or ready prepared pâtés , perhaps mixed with watercress for a great Hampshire pairing , by Chalk Stream or from Butler Country Estates , both stocked locally .
