like cooking when I had so many more opportunities. I got my dad to look at the Culinary Institute of America in New York, and he said if I studied there, he was okay with this decision. They are my biggest supporters to this day, and I am so lucky to have found a career I enjoy doing so much.
WHY DID YOU DECIDE IT WAS TIME FOR A BOURBON STEAK IN LAS VEGAS AND WHY DID YOU CHOOSE THE FOUR SEASONS LOCATION?
I always knew we would open a Bourbon Steak in Las Vegas— it is the perfect city for this restaurant and now that Las Vegas is my home, I knew I had to have one here. When the opportunity arose to open in the Four Seasons, I knew this would be the right location. There is truly nowhere easier to get to, as we are but a few steps from the valet out front of the hotel. You are on the Strip without having to be“ on the Strip.”
HOW IS BOURBON STEAK DIFFERENT FROM OTHER LAS VEGAS STEAKHOUSES?
Bourbon Steak represents the classic steakhouse. I wanted this to be a place where locals could come while also a must-visit restaurant for those visiting. In order to do this, we provide a variety of ways to experience the restaurant: one night you might sit at the bar and grab a burger off our lounge menu, the following week you’ re indulging in Caviar Twinkiees, fresh shellfish, and a tableside tomahawk and on Saturday come back for live piano music in the lounge with cocktails. We will always be bringing new dishes, drinks and events, which provides a special place to be in Las Vegas.
