Recipe: Smoked
Halibut Roulade
Serves 8
Ingredients:
500g smoked halibut
Juice of 1 lemon
300g cream cheese
100g horseradish
75g softened butter
Bunch of chives
Method
1. Put aside 4 whole slices (depending
on size) of smoked halibut. You will need
these later to make the outside layer of
your roulade.
2. Put the remainder of the smoked
halibut into a food processor along with
the lemon juice, cream cheese, horseradish
and butter. Blitz to a paste whilst still
retaining some texture.
3. Chop the chives, add to mixture. Check
and adjust taste if necessary-avoid adding
salt.
4. On a piece of greaseproof paper or
cling film(about A4 size)place the slices
of smoked halibut, smoked side down,
slightly overlapping each other.
5. With the longer side facing you, spoon
the blitzed filling evenly along the closest
edge. Lift the edge of the paper and roll
away from you to form the roulade. Place
flat in the fridge to set for 1 hour or until
required.
6. Present your roulade whole or cut into
slices, garnish and serve with your choice
of breadsticks, blinis etc.
