Food and drink FOOD HEROES: HUNGRY BEAR This issue we talk to Stuart Downes at The Hungry Bear, a travelling kitchen that is currently based at the Isle of Wight Lavender Farm HOW WOULD YOU DESCRIBE YOUR FOOD STYLE? How do I describe my food? As big bold, simply rustic and made with love. WHO HAS BEEN YOUR GREATEST FOOD INFLUENCE? My biggest food influences are my first Head Chef David, and also Rick Stein and Tom Kerridge. HOW IMPORTANT IS SEASONALITY IN YOUR MENU? Seasonality is very important especially on the Island. We at the Hungry Bear like to use the freshest Island produce and showcase all that it has to offer. WHAT IS YOUR FAVOURITE ISLAND FLAVOUR? My favourite Island produce is smoked garlic. I love the aroma and roast the garlic off for a sweet smoked caramel flavour. WHAT INGREDIENT COULDN’T YOU DO WITHOUT? I could not live without beetroot, I love the stuff!
