Be a masterful chef after a
Seaview masterclass
Keen cooks, convivial dinner
party hosts, please note:
Graham Walker of the Seaview
Hotel runs master classes
which can turn your amateur
skills nearly professional.
Up to 16 people will arrive
at the hotel, be briefed
over a cup of coffee and
then don their whites.
Working in pairs, the
candidates will prepare
a four-course meal,
and will come together
to see particular skills
being demonstrated.
“After being given
separate tasks the cooks
will be shown the finishing
touches to a meal – the
breaking down of the
turkey, for example,”
says Graham. “They will
be shown how, and find
out why we do things in
certain ways. And they
can ask questions.”
That part takes around

three hours.
After that,
the restaurant
manager
explains his
choice of
wines. And
then, the
exhausted
delegates can
sit down to
the meal they
have prepared – slipping back
to the kitchen to see desserts
being plated up and getting
tips on advanced preparation.
Classes will run in January,
March and May.
