Recipe
Ingredients: Drunken Summer Dessert
500g English strawberries, (washed then the hull removed)
100g castor sugar
300g mascarpone cheese
50ml Orange juice
150 ml Heavy Water Vodka
50ml Robust Red Wine
2 fresh free range eggs whites
sprig of mint
and icing sugar to dust
Method:
1/ Slice the washed strawberries and place into a bowl before adding the
red wine, vodka and orange juice and macerate for 15 minutes.
2/ meanwhile, whisk the egg whites in a clean bowl until light and just
forming a peak before slowly and gently add the sugar as though making a
meringue until firm peaks are formed.
3/In a separate bowl beat the mascarpone until smooth then fold in the egg
white.
4/Chill 4 long presentation serving glasses and spoon a small amount of
strawberries with the macerating liquids then top with a little mascarpone
layer, followed by a further layer of fruit and liquids and an additional layer
of mascarpone.
Repeat the process 3 or 4 times until an attractive alternating layer has been
formed
5/Top the layer off with a sprig of mint and dusting of icing sugar.
Please note that a selection of summer red berries such as raspberries,
strawberries and stoned cherries work very well together in this simple
recipe.
