Ingredients for 2 persons
1 parsnip
1 carrot
1 tbsp sesame seeds
1 tbsp red wine vinegar
½ tsp walnut oil (optional or you could use sesame
oil or for a zing, chile oil)
a handful fresh parsley, chopped
extra virgin olive oil
freshly milled black pepper
sea salt
Optional chopped walnuts, dried cranberries, pumpkin seeds, sunflower seeds or additions of your
choice!
Peel both parsnip and carrot. Discard the skins. Start
shaving the carrot into very thin and long slices using
a potato peeler, or if you have one, try using a spirali
for a different texture altogether.
Transfer them to a large salad bowl.
Add the chopped fresh herbs, the walnut oil and a
generous lug of olive oil. Season with a little pepper
and salt.
Stir well. Add the sesame seeds. Check the seasoning
and add extra pepper or salt to taste if necessary. Stir
one last time.
Transfer into a serving dish and serve at room
temperature.
You can also get a little more creative and add some
chopped walnuts, dried cranberries, in fact, you can
add anything you like, either way, it will be delicious!
