For the cake mix
150 grams self raising flour
50 grams of good cocoa powder
1 teaspoon of baking powder
4 organic eggs, large
200 grams of sugar
For the filling
200 gms of good chocolate
50 gms of salted butter
For the topping
Whipped cream, or your choice of topping, this also works well with ice cream at the last
minute.
A good quality strawberry jam, about two tablespoons.
Decoration
12 jars - These do not have to be the same, I save jars all the time, they just need to be
shorter rather than deep, you can see what I mean from the image.

To Make
One square, oblong, circular or any shape really, baking tray, lined with parchment.
Heat oven to 200 degrees.
Put all your ingredients into a food processor and blend until smooth. If it seems too thick
then just add a few drops of warm water to the mix.
Now pour into your baking tray and pop into the pre heated oven for about 25 minutes,
or until it feels springy to the touch.
Remove from oven and allow to cool.
Over a pan of boiling water, put a bowl with your chocolate and butter in and allow to
melt slowly. Do not allow your bowl to touch the water.
Now, time to get creative.
Once the cake has cooled you need to cut it up ready to go into the jars. Now, you can
decide how you do this, but I like to put half in the jar and then add the chocolate, a
spoonful, and then add a bit more cake on top to cover it. You can do this however you
want, chocolate first, chocolate last, it is up to you.
Now whip your cream until it is stiff, and then fold into the cream your jam. You want swirls
so not too much mixing in. Now spoon, or pipe, the cream into your little pots.
If they are for today, then now add your ribbon and string and pop into the fridge until you
need them, but if they are being made a day ahead, you can do the final decoration on
the day.
You can always make these a bit more “adult” by adding a few drops of rum onto the
cake before you add the cream, or sherry, or whiskey, you decide, either way, delicious!
So, so easy, looks fantastic and really, not difficult at all!
