Indian Potato Pancakes

I use the word pancake but think of a style like a bhaji, so they can make a
great starter on their own or as a side dish and of course, by swapping the
seasonings around, you can create something different to suit every taste
from savory to sweet, but lets start with my Indian version.
To make around 10 pancakes you will need:300g of grated potatoes.
2 Teaspoons of garam masala or your favourite curry mix.
4 Spring onion, finely chopped, including the green part.
1 large egg white, lightly beaten (you can use a mashed avocado if you
want to avoid the egg)
2 Tablespoons of coconut oil
salt and freshly milled pepper
Chutney, relish or a simple Crème fraîche to serve.
To Make
Once you have grated your potatoes, give them a good squeeze to get
rid of any extra liquid, a great opportunity to get rid of some of your stresses
here, and then pat dry on kitchen paper.
In a bowl add the grated potato, spices, spring onion and your egg white.
Add your seasoning and then stir to combine it all together, but be gentle,
we want to keep the look of the grated potato when we cook these.
In a pan, heat your oil and just drop a tablespoon of the potato mixture into
the pan and use the back of the spoon to flatten down, you want them
quite thin so they cook through, you do not a mouthful of raw potato.
Cook them for a few minutes on each side, about 3 minutes each or until
they have reached a perfect golden colour.
You will need to cook in a few batches, so once cooked, put them onto
kitchen paper and into a warm oven.
When you are ready, serve with a selection of relishes, mango chutney
works really well, or a crisp fresh salad.
The great thing about these pancakes is their versatility. You can add different
spices to create different flavours, try using cinnamon and swapping the
onion for grated apple or raisins and then serve with ice cream, just because
it is made with potato there should be no limitations!
