Too often I hear that people just do not have the time to cook every meal and yet, with a little planning, not only do you have some wonderful meals ready to go, you save a fortune and you have the added bonus of actually knowing what you are eating. The recipe here is for a vegetarian cottage pie, but just by making a larger pan of the actual lentil mix you can turn this into several different dishes. Increase the amount and separate out into different bowls. Now add chile and kidney beans to one to create a delicious vegetarian chili, add oregano to another to create a delicious spaghetti bolognaise sauce or perhaps you could add some sultanas, chopped apple, almond flakes and some korma spice to have a curry ready made. These can all go into the freezer, all you need to add is the pasta or rice to accompany along with a salad, both of which take no time at all.
