Sopa Castellana
A variation of the soup from Castilla.
Ingredients:
1 loaf of day-old bread
3 cloves of garlic
Serrano ham or other preffered
Eggs (1 per person)
3 ¼ cups of broth. Can be beef, chicken
or vegetable
½ tsp paprika
1 bay leaf
Olive oil
Spain
Steps:
1. Cut the bread into thin cubes and crust them in the oven
until golden brown.
2. Cut the ham into small pieces.
3. Fry the chopped garlic, add ham and bay leaf.
4. Add the bread cubes to the pan. When it has sautéed
briefly, season with paprika and stir well.
5. Pour in the boiling broth, add parsley, season with salt,
and stir well.
6. Bring to boil, lower the heat and simmer for 5 min.
7. Poach the egss, and let it cook until the whites are just
set.
