Carrot Salad with Chaat Masala
Ingredients:
Serves - 2
6 carrots
50 g olive oil
10 mint leaves
15 cilantro leaves
10 g Chaat masala
20 g lime (juice)
150 g Greek yogurt
¼ diced pineapple
salt
Chaat masala:
4 tsp dried mango powder
3 tsp cumin
1 tsp coriander
1 tsp dried ginger
3 tsp salt
1 tsp black pepper
¼ tsp asafoetida
½ tsp chili powder
Steps:
1.Scrub and wash the carrots and cut them into bite sized
pieces (try to make sure they are roughly the same shape) put
them in a bowl and cover them with plastic wrap.
2. 90 sec in a microwave on high.
3. Poke a hole in the plastic.
4. Give the carrots a dash of olive oil and salt and toss it with
the chopped cilantro.
5. Toss the lime juice with the pineapple (diced) and the
chopped mint.
6. Add the Greek yogurt to a bowl then add the carrots and the
pineapple.
For Chaat Masala
1. Mix all ingredients and store in fridge.
2. Top carrots with Masala.
