6. Remove the dough from the fridge and roll it to a 1/8" thickness on a well-floured surface.
7. Cut out shapes using your cookie cutter. I used a maple leaf cutter.
8. Bake for 7-9 minutes.
To Make The Filling
9. Cream together the butter, milk, maple syrup, vanilla, and maple flavouring until smooth.
10. Add icing sugar until the filling reaches a smooth consistency.
11. Pipe the filling onto a cooled cookie and stack another on top to create a cookie sandwich.
