Cookie Dough
1 cup +3 tablespoons flour
1/4 teaspoon baking powder
1/4 teaspoon salt
1/2 cup butter
1/4 cup white sugar
1/4 cup maple sugar
1 egg
1/2 teaspoon vanilla
Maple Filling
1/4 cup butter
1 tablespoon milk or cream
1 tablespoon maple syrup
1/2 teaspoon vanilla
1/2 teaspoon maple extract
3/4 cup icing sugar
Instructions
To Make The Cookies
1. In a medium bowl, whisk together the flour, baking powder, and salt.
2. In a large bowl, beat together the butter and sugars until fluffy, then add in the egg and vanilla.
3. Fold the dry mixture into the large bowl - do not over mix.
4. Form the dough into a ball, seal tightly in plastic wrap, and refrigerate for 30-60 minutes.
5. Preheat the oven to 375°F (190°C). Line two cookie sheets with parchment paper.
