KIKI's MEHNDI CAKE

STEP 1:

Bake and ice two cakes. I made 8x8 and 8x10 inch cakes. You can use any icing and cake recipe of your choosing!

STEP 2:

Make your royal icing.

Ingredients & Materials:

2 cups of icing sugar

2 egg whites

½ tsp of lemon juice

Food colouring of choice (I chose dark red)

Henna stencils

Procedure:

1. Beat the egg whites in a stand mixer at high speed until they are light and foamy.

2. Gradually add in the icing sugar.

Add the lemon juice.

3. Beat the mixture until it becomes thick.

4. Add food colouring until you reach the colour shade you’re looking for.

STEP 3:

Time to assemble!

1. Roll out a sheet of fondant that is about 28-35 inches in length and 5-6 inches in width (you want to ensure that your final strip will be able to wrap around the entire cake layer, with a bit of excess).

2. Take a long straight edge and cut the fondant so that it has a flat base.

3. Measure the height of your cake.

4. Take a long straight edge and cut your fondant to ½ an inch more than the height of your cake.

5. Cut the side edges of the fondant so that they are straight.

6. Place your stencil on top of your fondant strip.

7. Spread the royal icing over the stencil so that it is completely covered.

8. Scrape off the excess royal icing.

9. Wait 2-3 minutes then peel away the stencil.
