PLANT-BASED BURRITO BOWLS

Yield: 3-4 servings
The idea of this recipe is to use whatever veg you have in to reduce food waste, so I’ve given alternative suggestions below but tailor to whatever suits you and don’t be afraid to try something new!
1 bell pepper
1 courgette / 1 aubergine (cucumber can also be used)
2 small carrots / 1 large parsnip
1 small onion
1 tin of chickpeas (small or large, either is fine)
1 tin of mixed taco beans (or 1 tin of baked beans)
Fajita spices
1 tin chopped tomatoes / 1 tablespoon of tomato puree + ½ litre of veg stock
Rapeseed / olive oil
Garlic to taste
Rice or quinoa
Any other veg you have! Sweetcorn, broccoli (don’t forget the stalks!), kale, spinach, peas, sweet potato all work well.
Serve with sliced avocado/guacamole, sour cream/mayo and a slice of lime if desired.
