“A classic example is sour beer; regulars came in and said they hated it, but then an hour later someone came in and said it was the best beer they’ve ever tasted,” said Prosser. “It all comes down to individual taste.” Prosser has favorites and recommendations — Weihenstephaner Hefeweisbier, brewed at the oldest brewery in the world, Weihenstephan, is a favorite, as well as the Belgian St. Bernardus quadrupel beer — but he confirms that he hasn’t gotten to go through the entire in- ventory personally. “I haven’t tasted them all, I have a business to run,” said Prosser. ✻ October 2015 INSIGHT
