mally go on the weekend , on Sunday , and bring back for the rest of the week .” In addition to fresh seafood , Sutchaleo stocks up on peppers and herbs including basil and Lemongrass at the market .
While Thai One On came onto the scene in Anniston in 2012 , Sutchaleo has a rich history in the restaurant business . He opened the original Thai One On in Indianapolis , Indiana where it was once ranked the third best restaurant in the city .
When the economy took a downward turn in 2009 , Sutchaleo closed his restaurant . He found his way to Calhoun County through working in management at O ’ Charley ’ s Restaurant & Bar .
Although Sutchaleo never had formal training in cooking , he says he learned as he went , drawing inspiration from his mother . “ I ’ d try to find out what she put in [ her food ] and how she ’ d make it . Unfortunately , I could never duplicate what she made .” Sutchaleo found his own way
around the kitchen and has built , for a second time , a Thai restaurant in which he can be proud .
Sutchaleo realizes that many people are intimidated by trying new food , but he encourages everyone to give Thai food a chance . “ I want people to get out of their comfort zone a little bit and just try it out .”
Sutchaleo has big plans for the future as he develops his craft . “ This is not it for me . I want to be able to expand from where I am today to give people more opportunities to try Thai food .” He says he ’ s looking at multiple locations to expand in the next few years , possibly even a mall food court setting .
