Sweet Potato Pie • • • • • • • • • 1 pound sweet potato 1/2 cup softened 1 cup white sugar 1/2 cup milk 2 eggs 1/2 teaspoon ground nutmeg 1/2 teaspoon ground cinnamon 1 teaspoon vanilla extract 9 inch unbaked pie crust 1. Boil sweet potato with skin for about 50 minutes or until it’s done, then remove the skin (run cold water over it to help). 2. Break the sweet potato apart in a bowl, then add butter and mix well. Stir in sugar, milk, eggs, nutmeg, cinnamon and vanilla and beat on medium until the mix is smooth. Pour it into the unbaked pie crust. 3. Bake at 350 degrees for about one hour, or until a knife inserted into the center comes out clean. Let the pie settle before serving. 24 December 2015 INSIGHT
