With so many choices to choose from, what will you be
ringing in the New Year with when the clock strikes midnight?
Janet-Tyson Prosser of Tyson Fine Wines located in Golden Springs says she will be drinking Saint-Hilaire Blanquette 2008(18.50) and for the cost it is great. Dry, toasty,
smooth and clean, SAINT-HILAIRE truly captivates with
an attractive yeasty aroma and luscious creamy texture.
The palate is light and crisp with citrus and apple ?avors
and the body is just hefty enough.
1. Champagne has to come from the Champagne re-
gion of France
2. Cava is a sparkling white wine from the Spain that

Another one she recommends is the So?a Blanc de
Blancs (21.50). Fruity and refreshing, So?a Blanc de
Blancs is a rare blend of Pinot Blanc, Muscat, and Riesling. Mellow ?avors of apples
and pears are topped by a
hint of citrus and honeysuckle. Elegant in character, this
wine is lightly textured and
vibrant through the ?nish.
With all the selections staring us in the face this holiday season, Mrs. Prosser gave
me a quick tutorial on what
exactly we will be staring at
when shopping for our “bubbly” this season.
