Foreword by Tristan Mason
I am truly honoured to have been selected to introduce you to the 2017 insideSUSSEX Restaurant Guide! Restaurant Tristan is surrounded by authentic Sussex heritage which includes our 16th-century building, so I feel proud to be representing the best of Sussex ' s restaurants that you will find in the pages to follow.
We are ecstatic to have retained our Michelin Star for another year, 2016 has truly flown by and been extremely busy for us – which we are incredibly grateful for. 2017 is looking to be another fantastic and busy year for our restaurant.
At Restaurant Tristan we ' re always focused on both the quality and service that we provide all of our valued diners. We believe we have helped raise the bar in the local area, being the first Michelin starred restaurant in Horsham, pushing the boundaries with our contemporary flavours, unique ingredients and the flare of our young team.
With the craziness of everyday life we feel diners need a place to escape to, a place where people can find solace in the delicate intricacies of each dish. We focus on creating an experience that represents the embodiment of all the best local produce Sussex has to offer. I believe that eating with us should be an experience for all to remember.
As a chef I always find myself inspired by the sheer amount of diverse produce that can be found from even the simplest of landscapes. The plentiful Sussex countryside continues to be the source of some of our finest ingredients that we serve.
