The Brasserie MS , a 60-cover restaurant in the heart of Folkestone , is bringing French food to the fore , led by chef patron Mark Sargeant .
The restaurant has been designed by Mark himself and boasts art-deco features , original black and white prints on the walls , sleek marble table tops , classic French jazz and stunning original walnut parquet floors .
Visitors can experience a classic French menu with a modern twist , drinks in the cocktail lounge , or experience something really special at the Chef ’ s Table . This unique experience includes a tour of the facilities including a behind-the-scenes look inside the kitchen , an introduction to each of the chefs and a visit to the wonderful walk-in wine cellar before diners are seated at the exclusive dining table boasting an uncompromised view of the kitchen . The bespoke menu will be served by Mark Sargeant himself , creating a truly special experience that is one of a kind in Kent .

What led to you becoming a chef ?
I was eight when I decided I wanted to become a chef . It was strange as no one in my family had ever been in the industry at all , but it ’ s all I ever wanted to do . I started washing dishes at Chimney ’ s Steak House in Leybourne , Kent when I was 13 . I worked my way through the kitchen and at 15 was working on the grill section . I went to an all-boys grammar school , so there was no cooking there , but I left at 15 and went to catering college in Tonbridge .
