Leftover Pizza Pie Recipe by : Hisense www . hisense . co . uk Ingredients :
Pie crust :
• 300g flour
• 150g butter
• 1 egg
• Pinch of salt
Filling :
• 4 slices of leftover pizza
• 4 spring onions , sliced
• 200g spinach
• 4 eggs
• 100g sour cream
• 100g cheese
Method : 1 . Pre-heat the oven to 180 ° C .
2 . Slice the butter into small cubes and begin kneading it into the flour . Add the egg and salt and continue to knead until everything is combined .
3 . Place the dough in the fridge and allow to rest for half an hour before rolling out to a 5mm thickness .
4 . Put the rolled-out dough into a buttered pie dish , pressing evenly into the bottom . Use a fork and lightly prick the base before covering the dough with baking paper and filling with something heavy such as ceramic balls or rice and bake for half an hour at 180 ° C .
5 . Chop leftover pizza into small pieces and place in a bowl , adding spinach , grated cheese , spring onions , sour cream and eggs . Mix until well combined .
6 . Transfer mixture to the baked pie crust and place in the oven for a further 35 minutes at 180 ° C . Voila !
