FOOD, GLORIOUS FOOD: Pinkster’s Gin Jam, £6.50, www.pinkstergin.com Picnic Perfect Berry Bread with Superberries (6) Ingredients: • 250g plain flour • 2 tsp baking soda • 1/2 tsp salt • 120ml almond milk, room temp • 115g sugar • 200g frozen mixed berries • 1 ripe banana, mashed • 1 tsp vanilla essence • 1 25ml melted coconut oil • 2 tsp Bioglan Superfoods Superberries (£9.99, www.bioglansuperfoods.co.uk) Method: 1. Preheat oven to 180°C. Grease a loaf pan with coconut oil. 2. In a bowl, whisk together flour, baking soda, salt and Superberries. 3. In a second bowl, combine the banana, almond milk, sugar, vanilla extract and melted coconut oil. 4. Fold wet ingredients into the dry until incorporated. Fold in 1/2 cup of mixed berries. Save the rest. 5. Pour batter into loaf pan and top with leftover berries. Bake for 45-60 minutes until you insert a toothpick and it comes out clean. 6.
