RACK YOUR WINE
‘Racking’ means transferring the
fermenting wine away from sediment. To
begin racking, insert a clear, 2.5cm-
diameter plastic tube into the fermenter
and siphon the clear wine into another
sanitised jug. Once transferred, top it off
and fit it with a sanitised bung and
fermentation lock. Do this slowly and very
carefully – you don't want to stir up the
sediment, and equally you don't want to
lose the suction from your siphon.
BOTTLE YOUR BATCH
It’s normal to feel a little bit apprehensive
about the bottling process, but it's really
not complicated. Simply siphon your
finished product into sanitised bottles
leaving about 5cm of headspace below the
rim, insert a cork into the hand corker,
position the bottle under the corker and
pull the lever. Practice makes perfect, so
buy some extra corks.
