Ingredients:
• 3 spring onions
• 4 cherry tomatoes
• 6 eggs
• Herbs of your choice( basil, oregano, etc)
• 2 slices cheese( cut into 6 pieces each)
Method: 1. Preheat your oven to 200 º C.
2. Place the eggs, spring onions and tomatoes in a bowl and mix. Add a pinch of salt if you prefer.
3. Fill a muffin tray with the mixture and place a square of cheese on each muffin.
4. Bake for 15-18 minutes. The tops should be firm to the touch.
