BOWLEYS’ ZERO-WASTE SMOKED STRAWBERRY COCKTAIL

Serves: 2
Ingredients:
• 100ml Westerhall Rum No. 5
• 60ml strawberry purée( leftover from the dessert)
• 40ml fresh lemon juice
• 30ml elderflower cordial
• Pinch of smoked Maldon sea salt
Method:
1. Prepare the zero-waste smoked strawberry purée. Use the strawberries that have been gently cooked down for the dessert. Smoke them in a Green Egg BBQ Smoker( or a home smoker) with a little Westerhall Rum No. 5. Blend into a smooth purée, adding a pinch of smoked Maldon sea salt. This purée is also used in the dessert- nothing is wasted.
2. Add all ingredients into a shaker with ice.
3. Shake hard for 10 seconds.
4. Double strain into two chilled coupe glasses.
5. Garnish each cocktail with a fresh strawberry slice and a pinch of smoked salt.
