Scrambled Tofu

Serves: 1 Prep time: 5 mins Cooking time: 10 mins
Ingredients:
• 2 tsp rapeseed oil
• 160g firm tofu, drained, dried and crumbled
• 50g spinach leaves
• 1 tomato, chopped
• 1 tsp turmeric
• 2 tbsp chives, chopped
• 2 tbsp parsley, chopped
• 2 slices wholegrain bread
Method:
1. Heat the oil in a non-stick pan and add the tofu, stirring well to cover the tofu in the oil.
2. Add the spinach leaves, tomato and turmeric, and fry for 5 minutes, stirring regularly.
3. Add the herbs and season to taste.
4. Serve with the bread, which can be toasted if you prefer.
