Sustainability, self-sufficiency and craftsmanship is at the very core of Birchwood, a fiercely local woodland restaurant headed up by Matt and Will Devlin, the visionaries behind the Green Michelin-starred The Small Holding. Offering breakfast, lunch and monthly supper clubs, Birchwood’ s defined food and drink truly celebrate their farm’ s bounty, their foraging and the local producers they champion. Guided by the landscape, the team hone in on the remarkable flavours found in the natural world, with vegetables grown by regenerative principles and pulled just before service- or preserved, cured and bottled to extend the taste of the season.
Menus shine a light on Kentish cheese, dairy, wines, spirits and beer, while ingredients such as mushrooms, brambles and elderberries are foraged from surrounding fields and woodland. Breakfasts here are wholesome and hearty, built around nourishing comforts, think yoghurt topped with puffed granola and honey, porridge with baked cinnamon Wilsley Park apples, or mushrooms on crusty sourdough toast with a generous helping of crème fraîche and tarragon. Come lunchtime, dishes such as whipped cods roe and seaweed, spiced monkfish and premium cuts of meat from Block, their own butchery, take centre stage.
