Buddha Bowl with Fresh Chilli Jam

This colourful bowl of plant-based perfection is full of nutrients and once eaten, will have you feeling fresh, full and fabulous.
Ingredients:
• Freshly cooked quinoa, or grain of choice
• Avocado
• ½ red pepper
• 1 carrot
• Red cabbage
• ½ cucumber
• Edamame beans
• Tracklements Fresh Chilli Jam
• Sesame seeds
• Optional: any other seasonal veg you can find in the fridge
Method:
1. Assemble a base of freshly cooked quinoa( or grain of choice) in your favourite bowl.
2. Slice an avocado and red pepper, peel a carrot into thin strips, slice some red cabbage and cut some cucumber into cubes.
3. Add the fresh vegetables on top of the quinoa along with a handful of edamame beans. Finish with a rather healthy portion of Tracklements Fresh Chilli Jam for a welcomed heat and sweetness, and sprinkle sesame seeds on top.
