Margherita Pizza Bites

A fun way to change up pizza night! These margherita pizza bites are made in a classic muffin pan for a delicious and easy lunch, dinner or appetiser recipe. Keep them classic with mozzarella cheese, pizza sauce and herbs, or add more pizza toppings for a bite-sized favorite. Meal prep and make these ahead of time for an easy reheat that kids will love!
Makes 12 pizza bites Prep time: 20 minutes Cook time: 15 minutes
Ingredients:
• 1 x 390g can refrigerated pizza crust
• 120ml pizza sauce
• 12 mozzarella balls, halved
• 12 cherry tomatoes, halved
• 2-4 tbsp shredded Parmesan cheese, plus more for toppings
• Fresh herbs: basil, thyme, parsley and oregano( dried herbs can be used as well)
Method:
1. Preheat the oven to 200˚C. Grease muffin pan with baking spray.
2. Roll out the pizza crust on a floured surface into a thin rectangle. Using a four-inch round cookie cutter, cut out 12 circles. Place dough circles in prepared muffin cups, pressing dough into the bottom and up the sides of each cup. Sprinkle bottom with shredded Parmesan cheese( about 2 tbsp). Add about 1 tsp pizza sauce to each cup. Top with two halved mozzarella balls, cherry tomatoes and more Parmesan cheese.
3. Bake until the cheese is melted and the top of the crust starts to brown, approx. 15-17 minutes. Remove from the oven and cool for 5 minutes. Top with fresh herbs if desired.
