A KENT FIRST : SALTWOOD ’ S HIDE AND FOX AWARDED SECOND MICHELIN STAR !
Following a Michelin Guide unveiling ceremony last month , Alice Bussi and Allister Barsby - owners of the already highly acclaimed Hide and Fox restaurant in Saltwood - were modestly shocked by the announcement of their newest accolade : a second Michelin star . “ Overwhelmed doesn ’ t quite describe the feeling ,” said Alice and Allister . “ Our little neighborhood restaurant has been awarded two Michelin stars ! Thank you to our amazing team who work so hard to produce our food , make our guests feel so welcome and give the best service possible .”
Based near the Kent coast , Hide and Fox was awarded its first Michelin star in 2021 , having only opened in June 2019 , and has since cemented itself as one of Kent ’ s most exceptional fine-dining restaurants . One of three one-star restaurants to be awarded a second star at the ceremony ( the other two being the Ritz Restaurant and Humble Chicken , both in London ), Hide and Fox now joins the ranks of only 25 other two-star Michelin restaurants in the UK and is the first and only restaurant in Kent to be awarded a second star . insideSTORY - FOOD & DRINK NEWS
FROM BLOSSOM TO BOTTLE : STUDENTS ’ HARVEST SUCCESS WITH APPLE JUICE DEBUT
Hadlow College ’ s orchard has borne its first fruit , which has been transformed into student-crafted apple juice ! Having been planted in July 2021 , the college ’ s three-hectare orchard had its first harvest last year , with students playing a key role in the process of bottling their first batch of apple juice . With the hope to make it more widely available across the country in future , the apple juice is currently available at the college ’ s own events such as its weekly plant sales every Wednesday during term time and the ever-popular lambing weekend , which attracted over 10,000 visitors last year .
“ Our students have been involved in every stage of the production process , including planting , training the crop , pruning and conducting pest and disease analysis ,” explained Alan Harvey , head of horticulture at Hadlow College . “ Grown with sustainability in mind and with use of the latest technology in production systems including robotic equipment and sensors , Hadlow College is looking forward to an even larger yield of apple juice next year .”
