Ingredients :
• 30ml Recuerdo Mezcal
• 20ml Campari
• 25ml lemon
• 15ml simple syrup ( ½ cup granulated sugar , ½ a cup of water – warm over a medium heat , stir and when sugar is fully dissolved allow to cool ).
• 3 cubes of ginger ( roughly 2cm x 2cm x 2cm )
• 20ml aquafaba
Method :
1 . Add the cubes of ginger to the bottom of the shaker and muddle .
2 . Add in ice and the rest of the ingredients and shake well .
3 . Strain into a rocks glass with a large cube of ice .
4 . Garnish with thinly sliced ginger .
