BISCUIT
Fluffernutter Cookies

Cook Time : 35 minutes plus chilling Makes : 12
Ingredients :
• 125g salted butter , softened
• 3 tbsp smooth Manilife peanut butter
• 1 tsp vanilla extract
• 75g soft light brown sugar
• 75g caster sugar
• 1 medium free-range egg
• 175g plain flour
• 1½ tsp baking powder
• Big pinch of salt
• Handful of roasted , salted peanuts
• 12 regular marshmallows
Method :
1 . Working by hand , beat the butter , ManiLife , vanilla and both sugars together in a bowl until smooth .
2 . Crack in the egg , mix again , then measure in the flour , baking powder and a big pinch of salt . Beat until you have a smooth cookie dough .
3 . Line a baking tray with baking paper . Roughly chop the peanuts .
4 . Using clean , damp hands , divide and roll the cookie dough into 12 golf ball-sized balls and place on the lined tray .
5 . Flatten each cookie ball slightly and stick a marshmallow on top , then sprinkle over the chopped peanuts .
6 . Chill in the fridge for 1 hour , or overnight if you like .
7 . When you ’ re ready to bake , preheat your oven to 180 ° C / 160 ° C fan / gas 4 .
8 . Line a second baking tray with paper and move half of the chilled cookies on to it . Spread out the cookies on both trays , so that they have room to spread as they bake .
9 . Bake for 10-12 minutes until the edge of the cookies have set but the centre is still nice and soft - no one wants an overbaked cookie . Leave to cool on their tray for as long as you can wait , then dig in .
