Zesty Spring Salad with Yuzu Dressing

Serves : 4-6 Prep time : 10 minutes Cooking time : Few minutes
Ingredients :
• 100g watercress
• ½ cucumber , sliced
• 100g garden peas
• 3 radishes , sliced
• Fresh mint , chopped
• Fresh dill , chopped
• 100g feta cheese , crumbled
For the dressing :
• 1 tbsp honey
• 1-2 tsp yuzu juice
Method 1 . Cook the peas as per packet instructions .
2 . Blend the honey and yuzu juice to create the dressing .
3 . Assemble the salad with the watercress first , then top with the cucumber , peas , radish slices and feta .
4 . Sprinkle the fresh herbs over the top before drizzling with the dressing .
