DAVE ’ S VANILLA PANNA COTTA

WITH POACHED CLEMENTINES

Prep time : 20 minutes Setting time : 4 hours Serves : 8
Ingredients :
For the panna cotta :
• 200ml of milk
• 600ml double cream
• 400g caster sugar
• 2 vanilla pods
• 2 gelatin leaves
For the poached clementines :
• 1 clementine , segmented
• 500ml water
• 200g sugar
Method :
1 . Add water and sugar to a heavy based pan and boil .
2 . Bring the water and sugar to 121 ° C , then take off the heat .
3 . Add the clementines to your stock syrup and leave to steep until completely cool .
4 . Next , place your two gelatin leaves gently into cold water .
5 . Add the milk , sugar , cream and vanilla into a pan and bring to a simmer on a medium heat .
6 . Remove the gelatin from the cold water and add into the pan with your milk , sugar , cream and vanilla .
7 . Stir them all together well .
8 . Pour into moulds and leave to set for a minimum of 4 hours .
9 . Once completely cool and set , gently heat the outside of your mould using hot water to release the panna cotta .
10 . Top your panna cotta with the cooled poached clementines and serve .
