Chocolate Truffles

Equipment :
KitchenAid Artisan 4.7L Stand Mixer KitchenAid Slicer and Shredder Attachment
Ingredients :
• 250g 60 % dark chocolate
• 120g double cream
• 50g desiccated coconut
• 100g dark cocoa powder
Method :
1 . Connect the slicer and shredder attachment with the coarse shredding blade to the stand mixer . Grate the chocolate on speed 6 .
2 . Heat the cream over a medium heat until hot , but don ’ t let it boil , and pour over the chocolate and let it sit for 5 minutes , then stir until smooth .
3 . Pour the truffle mixture into a shallow tray and refrigerate for 4 hours .
4 . Toast the desiccated coconut on a medium heat and transfer to a shallow plate to cool .
5 . Sieve the cocoa powder onto another plate .
6 . Using a melon baller or a teaspoon , scoop out a small amount of the cooled truffle mixture and shape into a ball with a diameter of about 2.5cm . Roll half of the balls in the cocoa powder and half in the coconut .
7 . Store refrigerated in an airtight container before you ’ re ready to gift wrap , or serve after dinner .
